Ingredients for Jerk Chicken:
- 4-6 bone-in, skin-on chicken thighs
- 2 tbsp Jamaican jerk seasoning
- 1 tbsp vegetable oil
- 1 tbsp honey
- 1 lime, juiced
- Salt, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, mix together the Jamaican jerk seasoning, vegetable oil, honey, lime juice, and salt.
- Place the chicken thighs in a large bowl and coat with the jerk seasoning mixture.
- Allow the chicken to marinate in the seasoning for at least 30 minutes, or up to overnight in the refrigerator.
- Heat a large oven-safe skillet or cast-iron pan over medium-high heat.
- Add the chicken thighs to the skillet, skin-side down, and sear for 3-4 minutes until the skin is crispy and browned.
- Flip the chicken over and place the skillet in the preheated oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature has reached 165°F (74°C).
- Remove from oven and let rest for a few minutes before serving.
