Ingredients for Jerk Jackfruit Burger:
For the patties:
- 2 cans of young jackfruit (in water or brine)
- 1/4 cup jerk seasoning
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- Salt and pepper to taste
- 1/2 cup bread crumbs
- 1/4 cup chopped cilantro
- 1/4 cup diced onion
- 2 cloves garlic, minced
For the toppings:
- Burger buns
- Sliced tomato
- Sliced red onion
- Lettuce
- Mayo (vegan or regular)
Instructions:
- Drain and rinse the jackfruit in a colander. Cut off the hard core from each piece and shred the jackfruit with your hands into bite-sized pieces.
- In a small bowl, mix together the jerk seasoning, olive oil, soy sauce, honey, lime juice, salt, and pepper until well combined.
- Add the jackfruit to a large resealable plastic bag and add the marinade. Seal the bag and shake it well to coat the jackfruit evenly. Marinate the jackfruit in the refrigerator for at least 30 minutes, or up to 2 hours.
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Remove the jackfruit from the marinade and place the pieces on the prepared baking sheet. Discard any excess marinade.
- Bake the jackfruit for 15-20 minutes, or until it is tender and lightly browned.

- Toast the burger buns and assemble the burgers with the jackfruit patties, sliced tomato, red onion, lettuce, and mayo.
